We have had radishes, peas, cucumber, squash and strawberries so far.
The ones we're still waiting on are the red tomatoes, yellow pear tomatoes, corn, red peppers, watermelon and cantelope.
I didn't think that we would be getting melons because no plants grew where I planted the seeds, but now we have them growing all over the entire garden, climbing up my tomato plants and pea plants and making it Very hard to manuever my way through. I have to pick up vines and move them so I can take a single step.
Here is a baby watermelon...
Peas...
Soon to be Red, Pepper...
Radishes...
Squash and zuchini!!
Josh and I have been eating zuchini for dinner almost every night for the past couple of weeks. Right now we are loving grilling them, but I'm sure pretty soon we will be sick of them. lol
I have made zuchini bread too, just need to figure out some more good recipes to use these things up.....

Here is a fav. Buckholts Family Recipe -- WE call it Vegetable Lasagna -- cause you layer it like Lasagna
1 layer of sliced zucchini
1 layer of sliced yellow squash
1 layer of sliced tomatoes
1 layer rings of yellow onions
season with season salt and pepper
1 layer of shredded cheddar cheese
___
Keep layering until casserole dish is full. But don't put cheese on top yet.
___
Cook at about 1/2 power until squash is tender about 10 minutes
Top with more shredded cheese
Cook for a few more min. until cheese is melted.
___
You may want to drain the liquid from bottom of dish -- the tomatoes and squash lose a lot of water
----
Enjoy!
